Ginger is commonly used for nausea, vomiting, menstrual cramps, osteoarthritis, diabetes, and migraine headaches, among other conditions, despite lacking strong scientific evidence to support many of these uses. There is also no good evidence supporting the use of ginger for COVID-19. Ginger flakes are primarily used to flavor soups, stews, stir-fries, marinades, and teas, offering a convenient way to enjoy ginger’s spicy and aromatic qualities without fresh ginger root. They can also enhance baking, spice blends, salads, and roasted vegetables.

To make dried ginger flakes, wash and peel fresh ginger root, then slice it thinly and evenly. Arrange the slices on dehydrator trays or on a baking sheet in an oven set to low heat. Dry at around 105°F (40-45°C) for 2 to 4 hours until the ginger is completely dry and crisp.

To dehydrate ginger in the oven, thinly slice peeled ginger to about 1/8 inch thickness and arrange in a single layer on a parchment-lined baking sheet. Dry at the lowest temperature possible (around 140°F or 60°C) with the oven door slightly ajar to allow moisture to escape. Check every 30 minutes and rotate the baking sheet for even drying. Depending on thickness and oven conditions, drying may take 2 to 4 hours until the ginger slices are dry and crisp.

Dried ginger flakes offer numerous benefits backed by scientific research. According to experts, including Dr. Linda B. White, a renowned herbalist, dried ginger retains its potent bioactive compounds, such as gingerols and shogaols, which have antioxidant and anti-inflammatory properties. These compounds are known to support digestive health, alleviate nausea, and potentially aid in managing inflammation associated with conditions like osteoarthritis. Additionally, dried ginger flakes provide a convenient way to add ginger’s spicy and aromatic flavor to culinary creations, ensuring a longer shelf life and easier storage compared to fresh ginger, thereby promoting accessibility and versatility in various recipes.

The global market for dehydrated ginger products can be analyzed from several perspectives:

1. Production and Supply

  • Major Producers: The Asia-Pacific region dominates the global dehydrated ginger market, particularly China, India, Indonesia, and Nepal. These countries are major production hubs due to favorable climate conditions and advanced agricultural techniques (HTF MI) (Business Wire).
